I can see your concern. I think the writers are not so much worried about character consistency than they are with making a funny/interesting episode. That's just the direction they're taking with the show. Personally, I'm fine with this. I don't think the show needs to take itself very seriously and the characters don't need to be completely logical.
But seeing Twilight snap isn't something new on the show. We've seen this with other characters. Fluttershy flipping out just because animals don't immediately warm up to her. Pinkie Pie developing schizophrenia just because she thinks her friends are avoiding one of her parties, etc. I don't think that this case is much different. Her craziness manifests itself differently than the others, and it makes her freakin' creepy, but I like it. Her various faces made when she talks with the CMC was hilarious IMO.
I still think the other two cases were done much better, however. A progression over the course of the show cumulating in one epic scene. In this episode, it was clear Twilight was going batshit from the beginning, and the silly expressions that make a scene were overused. If it had been a more gradual step into madness where she finally snaps near the end or something, I would have preferred that to what we got.
Still a funny episode though, and I'll only be concerned if the Luna episode takes the same direction. As personally, I find being over the top just doesn't fit MLP.
