That's already what I do mostly.

Can I do an acapella cover of a Backstreet Boys song for this? Only instruments will be three-to-five vocal tracks and maybe clapping.

Just to be safe, we can use as many effects as we want, right? I tend to use under 8 instruments already, but load them out with a whole bunch of wibbly-wobbly stuff.

The 8 instruments is just a hardcap limit. The idea is to bring the mix down to be more simple regardless of how many instruments you use. You can put as many effects etc. you want on the instruments, as long as the final product doesn't sound like a complex mish-mash..
