Maybe it's part nostalgia (I've been playing this game since I was like seven), but I just find it incredibly beautiful and relaxing. Skyrim's soundtrack is great as well.

^This, and pretty much anything else by Jeremy Soule.

But my favorite of all time has to go to Danny Elfman for Edward Scissorhands:

EDIT: Makkon is right, there are too many fantastic soundtracks to really choose one (though I chose the one that made me cry the first time I heard it, what a sentimental am I).

Also soultensionbenjamin is also correct in saying pretty much every Sonic game, ever. If you ever want to learn how to make extremely catchy melodies, look no further. Those games really taught me a lot, especially in my formative years.

Gonna have to say L's theme from death note

They made the music go brilliantly with the anime

That they did.

I didn't see this anywhere. I was a bit surprised. Kingdom Hearts soundtrack:

I also can't forget Tomba! 2. The music in that game was expertly crafted and applied:

Last but not least, Bit.Trip.Runner. Anamanaguchi is a chiptuning beast.

I've recently really been enjoying the soundtrack from The Adventures of Tintin. Then again, it is John Williams, so I guess that explains a lot. :P
