One thing to note is that the 6 or so midi channels used for strings use the mod wheel for volume and note velocity to determine the speed of the legato (note blending). That's how the system works in LA Scoring strings. Upon further study of scores, I realize that I used this feature far to heavily, actual use of legato is subtle and rare. I'm still not using it very well at all. The recent update does away with any need to have them all on separate tracks, and it still can preserve the full legato. They call it Divisi, or string divisions.
There are also some tracks that use drumloops to define the general mood, so they are just a single note.
Also, many instruments will occupy the same midi track; they are called Multies, and really simplify the whole composition process.
