I'm going to focus on songwriting, lyrics, organization of everyone, some of the heavier vocals and singing, and ANYTHING relating to guitar (including some 7 or 8 string stuff). I'll also see what else I can do.

2: I also play a few ethnic instruments to some degree, mainly sitar and banjo but I also own a bowed psaletry and a kalimba if they'd be any help in some of the songs.

Cool. What type of metal? Just heavy metal, like Judas Priest or Iron Maiden? Or were you thinking something more evil, like thrash metal or death metal? How about black metal?

Would you consider going for a slightly more experimental deathcore sound mixed with metalcore. A combination of a Neaera and Surrounded by Monsters sound...
